Paleo Cheese Sauce Recipe

[serves 4]

For the chili:

2 Tbsp Olive Oil

2 Cups Water

1 Large Yellow Onion, Chopped

1 Poblano Chile, Seeded and Chopped

4 Garlic Cloves, Chopped

2 Tbsp Salt

1 (4 oz) Can Green Chiles

4 Tsp Chili Powder

2 Tsp Cumin

2 (15 oz) Cans Black Beans

2 (15 oz) Cans Pinto Beans

1 (15 oz) Can Cannellini Beans

1 can (28 oz) Fire Roasted Tomatoes

For the toppings:

1 Box Cherry Tomatoes, diced

12 Scallions, chopped

2 Avocados, sliced

9 oz Smoked Cheddar Style Dip

In a large pot, heat oil and add onion, poblano and garlic. Cook until onion is translucent and add remaining ingredients, bringing to a boil over high heat. Reduce heat once boiling and simmer until chili is thickened, 20 to 30 minutes. Season to taste with salt. Add cherry tomatoes, scallions, avocado and Smoked Cheddar Style Dip as desired.
